We bought this hand crank machine to make pork loin slab steaks tenderer. A good friend bought a generic $20.00 tenderizer that had pointy rollers. His had so many problems with the meat trying to follow the rollers around, clogging and binding up if the meat was cut just a bit too thick. The Weston had NONE of these problems. I cut large whole pork loins into 1 1/4 inch thick slab steaks. I started cranking as I fed the meat into the top and it only took a split second and the meat was dropping out the bottom. I rotated the meat 90 degrees and run it through again. The steaks, when cooked in a fry pan, can be cut with a fork. My wife puts some butter on the cooked steaks which adds moisture to them. Season them with whatever to your liking and you will be happy. Get yourself a stiff, long bristled brush for the rollers (blades) for cleaning. We really like out Weston tenderizer. We have cut up 6 whole pork loins to date and no problems yet. The clamping system requires a square edged table for the clamp. I use a portable wooden work bench to mount it to and use 2 large cookie sheets for the meat. One cookie sheet for the meat to be tenderized on it and the other for the tenderized meat. The process takes very little time and effort. Did I mention that I am 69 years old? We did 4 whole pork loins, from opening, washing, slicing by hand, tenderizing, wrapping back up and cleaning up in 2 hours.
