This knife is the Victorinox steel, well know for its strength, quality, and edge. The 10" length may take some time to get used to, but it will be worth it. The longer blade lets one more easily carve a roast, or chop vegetables. The only thing that I would change is the size of the handle. The girth of the handle could be slightly larger for use by a man with a larger hand. Great value, and this knife was recommended to me by a master chef.

I have owned and used numerous (and very expensive) Chef's Knives in my lifetime. That includes expensive forged knives from Henckels, Wüsthof, Sabatier, Dexter, etc. This Victorinox 10" Chef's Knife is by far, THE SHARPEST KNIFE I have EVER Used. It is scary sharp and I love it. The fact that it costs a fraction of what the "Fancy Knives" cost is an added plus! I'll admit, it isn't real pretty and showy, but it more than makes up for it in Utility and Function!!
