Having attended the Culinary Institute of America and having to supervise chefs and bakers in my new position, I wanted to give them the opportunity to developed there skills by looking at recipes and proper ways to prepare, store, and handle food. The book was like a bible to anyone attending the school and I wanted to give those people working under me the same chance to learn some of the skills that are needed who can not afford to go to CIA. It's nice to be able to find "Professional Tools" on E-Bay, whatever your field of work my be. I feel that being able to find products on E-Bay to bring joy to your personnel life is great. Why can't we use it to find things that will bring alittle more joy to our work place. Giving the book has opened some peoples eyes to the true skills that it takes to be a chef in this day and age. The recipes and procedures in this book have been written by the worlds greatest chefs and is available for anyone to look at when they have the desire to try to advance themselves.Read full review
A wonderful cookbook. Well, it's actually a textbook. This book is written, and supported, by professional chefs and used as required reading at the Culinary Institute of Art in Hyde Park, New York. . This is NOT your traditional cookbook. One, large quantities should be expected (such as one full gallon of soup) as the finished product. Second, know that you will need commercial grade equipment to take full advantage of this book. Start by picking up a kitchen scale, and not one that you can stand on... I love this book, all the recipes are restaurant quality and exceed the expectation when complete. But, remember, it is a text book, not a store shelf cookbook.
This was the book I was given in culinary school it got lost it got lost a long time ago and It's an amazing book so happy to finally be able to replace it.

My daughter is thrilled to have this book finally! I refused to pay $80.00 at Barnes and Noble, we got a fifth edition and a 6th edition (mother and daughter set!). My 17 year old daughter loves to cook and this explains all of the techniques so that she can try new things without me around. We are thrilled.
