The information presented is easy to understand and really explains how the body reacts to high glycemic foods versus low glycemic. I feel like I have gained eating strategies that I did not have before I read this book. The recipes are simple and easy to follow and also taste good! My only complaint is that, because it is an older cookbook, there are no photos to serve as inspiration as you might find in more recent cookbooks. A reissue of this book with some modern photos would be a great idea!

I did Atkins for almost two years. Can you lose weight? Absolutely! Is it Healthy? Not really. Atkins can be Healthy if the protein you consume does not contain bad fats. That is why I love this book so much. It is very easy reading and simple to understand and then follows up with a ton of recipes. The book is based on the Glycemic Index, which in a way, is what Atkins was all about. Both diets stress that it is important to ones health and weight loss to eat foods that do not raise blood sugar levels, the Glycemic Index(GI)is a measure of how much particular foods raise these levels. This is where Atkins is only half right. It is true that meat and other low or no carb foods do not raise blood sugar leves and have a low GI, but neither does Spaghetti, a food that must be avoided on the Atkins diet because of its high carb content. Both bood agree that white bread should not be consumed. It raises blood sugar levels more than pure sugar. This book is wonderful. It tells you what the good carbs are, something that Atkins never discussed unless it was veggies. I have done lots of diets and this is my favorite. I have always thought that the best diet is a natural diet not laden with processed foods. This book provides plenty of recipes for that. Plus, I can have pasta and chili whenever I want, which makes cooking a lot less of a hastle. On Atkins it was always what meat tonite. Do yourself a favor and buy this book, but only if you want to lose weight and be healthy! I would also recommend buying some things, not everything Organic because of the poor food quality nowadays, but that is another book, very important reading. For those who are used to Atkins and always having a hard time trying to find bread, because lets face it, everyone wants bread. I have found the perfect one. It is high in protein, low on the GI, and has a list of Organic Igredients that can almost be counted on ONE HAND. It is called Ezekial Bread. You can find it in the frozen food section of some SuperMarkets and Health Food stores. Alvarado Street Bakery also makes an Ezekial bread packaged as California Bread. This is an amazing cookbook! I was recently diagnosed with Type II diabetes and wanted to learn as much as possible about "carbohydrates" and how they affect your blood sugar levels. Boy did I find a "goldmine." This book is chocked full of information on carbohydrates and the glycemic index they represent. It has been very helpful in attaining my goal of getting educated about carbohydrates. Now I feel more comfortable with grocery shopping and food preparation. Thanks Sandra Woodruff for a wonderfully education instrument. I know I will use this for many years!!
I tired all the chicken dishes. Most favorite one was on page 239 called "Pecan Chicken" Loads of awesome flavor! My least favorite was on page 246 "Mexican Lasagna" Way too dry. I can't give the book full credit because I am not a pork eater. However it's really nice to know what your getting as you cook each meal as all the Nutritional Facts (per serving) are located at the bottom of each dish.
This cookbook is so educational and so yummy. I have been wrestling with my weight for some time due to all the medications I am taking. This cookbook gives recipes for foods that say with you. She also goes in depth about how the whole glycemic index works and why it works. It is so very helpful. I highly recommend this book to those who need to loose a little weight or those who don't know about the glycemic index. I can't say enough good things about this book. You just have to buy it to know what I'm talking about.
