I was tired of creating cakes from mixes that lacked depth of flavor or variety. Devil's food, white, yellow, they were all the same brand to brand. I felt I had cake burn-out. Still, with my busy life,the convenience of a mix is the easy way to whip up a cake in a hurry. A few weeks ago I purchased "The Cake Mix Doctor" by Anne Byrn (1999). Talk about waking up the taste buds! The author takes ordinary cakes, readily available ingredients and Viola!, creates cakes laced through and through with flavor and wonderful homemade texture. Throughout the book the author gives her personal tips and short stories of how the recipe came to be. With each enhanced cake mix recipe is a suggested frosting. The recipes for the frostings are also included in the book. My favorite recipe so far is the "Buttermilk Devil's Food Cake with White Chocolate Frosting". The cake was intense with chocolate flavor and the frosting was creamy, rich and soooooo good! The recipes are divided into categories: Chocolate Cakes, Cakes with Fruit, Strike it Rich Cakes, Cake-Mix Classics, Special Occasion Cakes, Cheescakes and Gooey Cakes, etc. Additionally, Anne give you some recipes for creating drop cookies and bar cookies with cake mixes. The listed retail price on the paperback is $14.95 and this book is certainly worth every penny of it. I love this cookbook. It takes a simple box cake mix and turns it into your own special signature. It gives you helpful tips and confidence for the young budding chefs to put your own touch on your favorite cake. A very useful cookbook that won't just sit on the shelf collecting dust. It would be a thoughtful gift for any young person especially moving out on their own. I like this cookbook and have given it to several nieces and nephews. A couple of nieces friends have asked for the book as well.

This is a fabulous book to have on hand for special occasions or any time. I just baked one of the gorgeous cakes in this book for my Thanksgiving meal. Everyone raved about the sweet potato cake. The cakes all start with a basic store purchased mix and then your own ingredients are added to make it taste home made delicious. Great cake recipes and home made frosting recipes included. I've ordered more of this authors books. I only hope the others are as useful and easy to use as this one.
This book is chock full of helpful hints and brings the joy back into baking. It was suggested to me by my 80+ year old mother and she's an "old school" kitchen wizard. I've only tried a couple of the recipes so far, but found them easy to follow and the results were beyond expectations. A must have for anyone planning on entertaining company, where dessert will be a part of the evening.
