This is one of the best healthy cookbooks I've ever owned...and I've bought plenty. Rocco takes 150 ordinary, everyday meals and desserts and remakes them using healthier ingredient choices that are typically in most cook's pantry. One example it using fatfree Greek yogurt as a substitute for sour cream. The only reason I didn't give it a excellent rating is that there were several recipes that I think very few "average" people would ever cook. Overall though, I think it's a great cookbook for anyone wanting to still eat good comfort foods, but in a healthier way.
The first thing I noticed about this book that made me buy it was the fact that a chef, not a dietician, came up with these recipes. A chef that is known for flavor. I have low fat cookbooks that the food is blah. They are written by everyone under the sun but a chef. So that fact that a food network chef wrote this made me perk up and buy it. And I am SOOO glad I did! The chicken fried steak is hands down my favorite. I am watching my carbs, so after I make this dish I scrape off the bottom portion of crust. My husband, a true chicken fried steak, lover loves this more than most restaurant ones! The Clam Chowder soup rivals some of the best clam chowder I have eaten on the coast. I changed some ingredients in the dough on the pizza and it was wonderful as well! The toppings were great! Made the quiche this morning and it is great. What's great about it is you can make it, refirgerate it, and then have breakfast you reheat every morning. Super fast! put a dollop of Greek Yogurt on top and it's perfect. Also I love how it shows the fat grams before (the fatty recipes) and after (his recipes) along with the carbs, protein, calories, etc. The recipes in this book are great and you can tweak things also to make your own flavors that you like. I hate dieting due to the fact you can never eat chicken fried steak, brownies, pizza, pasta, cheeseburgers, cream soups, chinese food, etc (and I am sure that is why a lot of people fail at dieting..they feel deprived of their comfort foods)..but with this book I now can. THE MAIN CONCEPT OF THIS BOOK IS GREAT BUT GEARED MORE FOR PEOPLE USED TO RICH, EXPENSIVE FOODS. THE ALTERNATIVES ARE ALSO VERY EXPENSIVE AND I DON'T THINK FIT THE AVERAGE PERSONS DIET ESPECIALLY IN THIS DAY AND AGE WITH THE RECESSION. THE RECIPES CONTAIN MANY INGREDIENTS THAT ARE OVERWHELMINGLY SPICY AND VERY TIME CONSUMING. WHAT I ENJOYED THE MOST ABOUT THIS BOOK WAS IT BROUGHT OUT ALOT OF MY COOKING CREATIVITY ON OPTIONS OF THE FOOD WE DO EAT. OVERALL I WOULD RATE THIS A VERY GOOD BOOK BUT JUST WAS NOT WHAT I EXPECTED. WOULD I RECOMMEND IT? NO, I DON'T NO ANYONE THAT ATE THE ORIGINAL FOOD MUCH LESS THE ALTERNATIVE RECIPES. I DO BELIEVE HOWEVER THAT IT IS ALOT OF BOOK FOR THE MONEY.
Using Rocco's recipes allows me to enjoy some of the food I had stop eating (like pasta) since I changed my eating habits; It also adds flavor the food while cooking healthy meals. I love the lightness and the low fat/calorie content of each dish. And now we can all eat the same at home. Time in the kitchen=minimum. I dont like that sometimes I have trouble finding some ingredients or they are a little pricy. However is worth it. I bought one for our home and a second as a gift. I highly recommended and they make great gifts, especially if you want to take the first step into a better, healthier life. There is a little bit of everything for everyone. PS: I confess, I like regular brownies better :)
This cookbook was what I expected. Some of the recipes are just so so but many are very good. The sauces are just excellent and versatile-worth the price of the book alone. The brownies are very good also. I think he hits a home run with the main courses tho. If you are really into cooking you can pick up a lot of good healthy substitutions to use in your own recipes.
