Excerpt: ... CHAPTER V: PHYSIOLOGICAL OBSERVATIONS. If it were possible that I could build up a human body, and that the materials for so doing were ready at my command, I should first study, for my guidance, the organism of a person in perfect health. I should ascertain what materials had been employed in his construction--their uses, quality, and proportionate quantities. The fabric having been completed, and the several organs set in motion (and, as we will suppose, with success), my next inquiry would be as to the nature of the food appropriate for the support of this animated machine; and, so far as matters worked well, I should be content. But if the several organs worked inharmoniously, and especially if certain diseases manifested themselves, which were known to arise from improper dictation, from excess or deficiency of certain matters required by the system, or from derangement of the digestive organs, I should, in either case, exercise additional care and caution in the selection of food, and in regulating the quantitative supply of those materials. I should likewise endeavour to restore any peccant organ to its former allegiance, and to the satisfactory performance of its natural duties. Should ill-suited or unwholesome articles of food continue to be employed, and, as a natural consequence, the products of digestion be rendered distasteful or possibly poisonous, to the system, diseases would immediately arise, which would set medical skill at utter defiance till all dietary arrangements were satisfactorily determined.
