A fantastic cookbook with recipes that aren't available anywhere else. Excellent description of times past and interesting histories. I've lived through this period of Jewish baking and have found very few of the bakery goods produced today and even the recipes are wrong. For instance, every recipe for mandel bread on the net describes it as "twice-baked" crunchy cookie, like a biscotti. Real mandel bread is very different. See the real recipe in this book. The real Kaiser rolls - the dough and had to fold them - are found in this book. No press or mold for shaping. Folding the rolls the way it was done years ago.
