I have one of these cookbooks, I bought this one for my daughter. It is a great read and gives you instructions on processes and details that are needed to have a great outcome. Every instruction in a recipe means something, learn why it is you do what you do in the order that it requires you to do it. Every section gives history and details, for example, biscuits, he goes into details on flours and gluten and explains why you do not want to handle your wet dough to much, it gets hard when you bake it. I already had one of these and it's a great cookbook so I bought another for my sister-in-law. Definitely the one I use the most and a great starting place for research if you are trying to learn to cook something new. Most of my husbands favorite meals have come from this book- I especially recommend the pork roast with garlic and rosemary :) There are great explanations of how to cook different cuts of meat and how to put various herbs together. A very good book if you want to learn how to cook as it contains a lot of methodology as well as excellent recipes.
