Great insight into home preserving practices in England by the late 1980s. Great historical reading. Interesting to see that on a few things, they were paying attention to science; on others, they were taking the "ain't nobody died -- yet" way of thinking. Reading between the lines, they do seem to be acknowledge that spoilage will not be uncommon when following their recommendations. I absolutely recommend this for historical research only. Do not use for home food preservation today. Instead, for food safety, best quality, best storage, and least food wastage, use lab-tested recommendations from modern, reputable sources, whose recommendations and testing will come from evidence-based research.
