This book is great from the standpoint that you can use this as a guide for making all types of soups, or breads. Novice and gourmet alike can relate to the guidelines given for flavorful cooking. Detailed guidelines are given for the basic how to, with lots of variations included. I like this myself because I am a cook who likes to experiment, and this is exactly how this book comes across, varied recipes and tweaks that have come about by experience, but true to the basic principles of good cooking . Good ideas especially on how to make broths and how to get the most flavor in the process. I don't like "canned", and this is not a canned type book. Bread recipes shared are both unique and standard, like the Buttermilk bread recipe is an old standby in many cookbooks. Author's notations about the recipe makes you want to try them , and seem new , even if they are not. Particularly like the Foccaccia recipe though I doubled the amount of oil ( by accident) and found the bread much superior in taste and texture. This was first of many Crescent Dragonwagon books I have bought and read. She is a great author of not only cookbooks but many other. When I read her cookbooks I want to cook. The stories she tells takes me back to my own friends and stories. Remembering how the house smells when I cook or even further back when my Mother was cooking.I read this book to my husband on our vaction he loved it as much as I did. All of the recipes are great, but the stock recipes are what I use the most. It has become a spiritual experience to make stock of my family. It is now a least a once a month experience for me. Just try it and see.
Great book, not only for the recipes, but for the read. So much fun! And it will totally change your life if you're a fan of soups and homemade breads. My family has been fed on a diet of Dairy Hollow House soups and breads for years now. This was the first cookbook I ever bought as a cash-poor college student, and I just gifted this purchase to a friend, who is also hooked. Great book for vegetarians and omnivores alike, which is what my family is made of...so everyone is usually quite happy. Yes, it's an older book....but it will never lose its charm! :)
