I've been sharpening one of my knives that I use just about every day with a well known brand name electrical knife sharpener. It worked well, but I had to re-sharpen it quite often. It was sharp, but not "razor sharp". I received the CHEF'S CHOICE MODEL 15 TRIZOR XV ELECTRIC KNIFE SHARPENER three days after ordering it, and used it to sharpen the same knife as I've mentioned above. Unreal, it's "razor sharp". I've used it on various fruits, vegetables, meat, etc. and what a difference. It works 100% as advertised, and I highly recommend it.

Too many people these days expect instant success or gratification, even with a mechanical device like a knife sharpener. If that's what you were expecting, then start taking your knives elsewhere and have them sharpened by an expert who has spent hours days months years to get a razor sharp edge. I am plenty satisfied with the edge the sharpener can give. I've been a hunter, and thus, and amateur knife sharpener on my life. This device is as good as they get 4 giving you a non professional, non razor sharp edge, which is all you will ever get from a device like this. And 90% of the time that's good enough for me. When it's not, that's when I bring out the lapse and take the additional time necessary to get the razor sharp edge I want. It's results are certainly good enough for a kitchen! Took just a small amount of practicing to get the blade in the slots right and use the right amount of pressure and speed. Sharpened all of my chef knives and paring knives. Sharpened two Pampered Chef paring knives I've had for 24 years. They were years past dull after sharpening them with several methods but I've kept them around because I like the size of the blade and used them for cutting butter for pie crust. They are razor sharp again!

This does sharpen knives of all kinds rather well and recuts 20 degree edges to 15. I can't give it 5 stars because it removes a lot of metal and the finished edge though razor sharp is quite rough. The finest disk could be finer. Once shap, re-honing is very quick, I leave this on the counter top and use the stropping slot on every knife as I take it from the block.
