Alice has not stinted on any of recipes, providing changes based on chocolate liquor labeling, so one can adjust to what is available, as well as desired taste. I I value her insights into the techniques and variations on a recipe, which has made me finally understand what makes chocolate such a fascinating ingredient. I now use her method of presentation in teaching how to make truffles -- here is the basic and the why and how of the variations.
Do not get it unless you enjoy chocolate. Terrific book, great author of cookbooks, with a story as well as recipes.
