What an amazing read! I consider myself a serious home baker looking to go semi-pro soon by opening my own catering business. That being said, I read this book literally from cover to cover the day I got it- yesterday, and still can't put it down! This is the first of all the myriad cookbooks I own to really describe and show pictures of what things look like step-by-step. It clarifies cooking principals that while well-known, can be considered vague- i.e what is a stiff peak exactly? and what does an egg sugar ribbon look like? and what "coarse crumbles" look like when making a flaky pie crust. I feel like I have acquired the knowledge equivalent of at least an entry level baking course. Sheer genius, and kudos to Dorie Greenspan for writing this masterpiece.
I had this book once before and accidentally gave it away. It is well worth the price, and the reading time it takes to read through the very detailed recipes. Your family and friends will be amazed at the wonderful foods you can make from this book.

I decided to buy this book after checking it out of our local library. It is wonderful. Julia explains everything is great detail as to why you need to follow her directions! It is beautifully illustrated for those of us who love pictures! You will not be dissapointed with this book, it is a wonderful useful addition to your cookbook library. Excellent!
