I have been making my own Bratwurst sausage for a while and decided it was time to expand my variety of sausage making. This was my first attempt to make the hot Italian favored sausage. I followed the mixing instructions, and then smoked the sausage on my pellet grill. The result was good, but the flavor of the sausage was not spicy enough for my taste. I would give this mixture a second chance!
