As a sushi man it is the best slicer for working for this price. It's thin and light weighted, so it helps me to reduce the fatigue for a long day of working for slicing maki, nigiri and sashimi. It's double beveled yet shaper than normal 15-16 degree single beveled knives. It doesn't specify the degree but I feel it's about 11-12 degree angle. It's easy to sharpen and easy to clean. I'm planning to buy another one soon. I have wasted few hundred dollars to buy a suiting knife for my work and so far this is the best. Strongly recommend to full time sushi men unless you are willing to spend over $300.
