First, let's acknowledge that this is an amazing value given the price. With that said, two things for the consumer, the steel in the blades will corrode and I recommend only hand washing. Mine have a few tarnish spots already. I also oil the knives often. It's a simple matter of running a small bead of oil down the blade and letting a little oil soak into the handle. The oil makes the handle look better over time. So far, the butcher knife and the paring knife are getting the most use. The paring knife is small and easy to use on things like fruit and veggies that need a smaller blade that can be rotated easily. I'm looking forward to the fall when I can use the complete set while butchering deer and making burger.

These knives disappointed me on so many levels. Apparently I don't know how to take care of carbon steel knives. They discolored quickly. I heard afterward that water is not a friend to carbon steel. Well, my knives are used in the kitchen and there is lots of water involved. The wood handles did not stand up to use. Maybe they weren't the right knives for what I need and that explains the fail. However, I will NEVER buy these knives again.

Grew up with Old Hickory knives in my mother's kitchen. Decided to get my own. Very pleased with them! They are still well made in the US of A, full tang, with nice, durable hardwood handles and arrive sharp enough to slice a tomato just by using gravity. Being carbon steel, they will tarnish if you put them away wet or dirty, but they clean up nice no matter what and over time they develop an attractive patina. They stay sharp for a decently long time and sharpen up to the finest edge you could ever want. Razor sharp. Take care of them and they will serve you well! I recommend you track down an Old Hickory cleaver and made a complete set that will last longer than you will. They don't come with a wooden knife block, but I recommend you purchase a magnetic knife rack and display them on the kitchen wall next to the fridge, just like Mama did. Read full review

Sharp out of the box, but not kitchen ready sharp. However, ten to twenty strokes with the ceramic made them paper cutting sharp good to go. These were a birthday present for a friend, who moved into her new home and I found her to be in need of new kitchen cutlery. She loves her new Ontario Old Hickory set, so I plan to get other Old Hickory cutlery to go with them as holiday presents or sooner, hopefully the latter, namely the longer butcher knife and the cleaver, those are the only two I know of at the moment and plan to get, hopefully next month.

I received a set of these for Christmas last year. They are the old fashioned knife - bare steel that keeps a keen edge for a long time. BUT they must be carefully maintained as they will rust in what seems like minutes, They also easily discolor because of the acids in food, So no dishwasher, and no immersion in water to wash at a later time. After use clean them off with soap detergent, wash clean and wipe dry, Also,it takes a while but they eventually obtain the super edge that makaes them so special (I used a rod sharpener after every cleaning - never an electric grinder type) But they will serve you very well - almost forever,

I purchased these for use in our catering kitchen. These knives weren't totally sharp when I received them, however many knives aren't. After sharpening them myself, they are a great set of knives. They hold an edge really well once sharp. Be aware that the knives are NOT Stainless Steel, so they will rust a bit; however, the rust wipes off easily, and if you carefully wipe a little bit of cooking oil on them before storage, it helps to minimize the rust. Just be careful to not cut yourself when doing this. My parents have had a set of these as long as I can remember, and they are some of the best knives they have had. Therefore I purchased these at their recommendation. I will be purchasing a second set to replace some of our other knives.
