A knife with a hardness of 58, not as hard as some japanese knives but is less prone to chipping by accident, really an all around knife. If you don't need to chop large vegetables or fruits i will recommend the small version of this model. It is easier to sharp with amn electric sharpner and it doesn't require a lot of time patience and practice to achieve a good sharp edge as a top grade japanese knife.
