I bought this yeast following recommendations of professionals in wine making as one of the best for fermenting Merlot "must". Prepared an yeast starter as described by Lalvin, and also added enzyme and yeast nutrients. The fermentation started as expected and on the second day BRIX dropped from 25 to 21, and since by 4 BRIX step per day. Today is the fourth day and I've measured 13 BRIX @ 18.4 deg Celsius, pH 3.4. I am very happy with this results so far and will buy this yeast again next year for fermenting vintage 2021 Merlot.
