    Reak jerky, not fatty. Tough enough to chew a few seconds, these are not "beef tenders" throughout ebay. Cook walks a fine line between too much moisture and not enough. The batch I got was almost pefect. However One sample I got would have made a kevlar vest. it could not be chewed. I was relucant to write, because it's really good, great, but it's on the tough side, which is how I like it.
