When it arrived, I tested by slicing an onion as thinly as possible, which immediately showed me it was ground true. Then, of course, sliced a ripe tomato. Edge, balance were truly fine. I only review after using the item I've bought. So far, after cutting meat, fruit, vegetables. Holds edge well, is easily touched-up with a diamond card hone.
