The fish is smoke dried as a way to extend it's storage life. To enjoy this fish. First, wash it with warm water and salt. Then soak it for few hours in hot/warm water for 2hrs or more. Then you can add it to the soup or dish and continue cooking to taste. This way the fish is softened and you get to enjoy the deep rich flavor in your meal. Try it this way for the best experience.
