    A fine instrument.

    This knife is extremely sharp and holds its edge well. I'm kind of afraid of it--but so are the vegetables, which do not dare disobey me. Never before have I seen such meek obedience in green onions. They do as they are told. It is not difficult to cut them very finely and precisely. The relatively small amount of pressure necessary to cut prevents deformation, and deformation is what limits how finely something can be chopped or julienned. If you slice vegetables every day, you should do it with a good knife. This is a good knife.

    Awesome knife!!!

    I bought my first 7” Shun Santoku back in 2004 and wore it down to nothing. This knife is exactly the same as the first one with a much better price tag. Sharp as hell! Great quality! Highly recommend!

    Excellent knife

    A great purchase- have used almost exclusively since I received it- the blade was a little thinner than I expected but has held up great- the knife holds an edge and my wife is afraid to use it because it is "too sharp". I would definitely recommend for the average home chef.

    Excellent Substantial Santoku

    This is a substantial knife good for heavy cutting and chopping. Even though it is an inch shorter than the 8 inch chef knife it is thicker and heavier making it great for tougher foods like carrots. Most of the Shun knives are known for their thin profile making then great slicers, but this one makes a great chopper.
