Tuna-Potato Puffs Yield: 6 servings
1 oz. can tuna
1 1/2 cup mashed potatoes
2 eggs, separated
1/2 t. salt
Dash of pepper
1 T. minced onion
Combine tuna and potato. Beat egg yolks; add salt, pepper and onion. Stir into tuna-potato mixture. Beat egg whites until stiff; fold into other ingredients. Pour into 6 greased custard cups of muffin tins. Bake at 350 degrees for 30 minutes.
A recipe from the Vegetables chapter: Baked Lima Beans Yield: 20 servings
3 lbs. lge. dried lima beans
1/2 lb. smoked bacon, chopped
1 lge. onion, finely chopped
2 8-oz. can tomato paste
1 T. dry mustard
Salt and pepper to taste
1 lbs dark brown sugar
Soak beans overnight. Cook beans, bacon, onion and tomato paste for 45-60 minutes. Beans should be firm. Transfer to a large roaster. Add mustard, salt and pepper. Cover and bake at 300 degrees for 1 hour. Remove lid; add sugar and brown slowly, stirring and adding water until well browned, about 4 hours. Let water cook in.
