                              1oz. Bulk Chipotle Powder

       Chipotle powder, is made by finely grinding jalapenos peppers that were slowly smoked over a natural wood fire. This slow smoking of the jalapenos peppers creates a chipotle powder that imparts a wonderfully smoky & spicy flavor to whatever it is added to. Chipotle powder has a long history of use in traditional Mexican cuisine and in recent years has become common place in the United States, especially the southwest.

       The smoke flavor and intense heat are perfect for salsas, Meat Rubs, Marinades, Chili Sauces, Southwestern, Mexican, and any food that would be enhanced by some heat and smoky flavors.

 

Broiled Chicken Thighs with Chipotle Sauce

1-1/2 tsp. ground cumin 
1 tsp. packed light brown sugar 
3/4 tsp. ground chipotle chile 
1/4 tsp. ground cinnamon 
Kosher salt 
8 boneless, skinless chicken thighs (about 13/4 lb.), trimmed 
3 Tbs. olive oil 
1 medium clove garlic 
1 large or 2 small jarred roasted red peppers, drained 
1 Tbs. coarsely chopped fresh cilantro 


Position a rack about 6 inches from the broiler and heat the broiler on high. In a small bowl, combine 1 tsp. of the cumin, the sugar, 1/4 tsp. of the chipotle, the cinnamon, and 1 tsp. salt. In a medium bowl, toss the chicken with 1 Tbs. of the oil, and then toss with the spice mixture.

Arrange the chicken on a rack set over a rimmed baking sheet lined with foil and broil until the chicken browns lightly on top, about 5 minutes. Flip the chicken and continue to broil until browned and cooked through, about 5 minutes more.

Meanwhile, coarsely chop the garlic and sprinkle it with 1/4 tsp. salt. Using the flat side of a chef’s knife, smear and mash the garlic and salt together to form a coarse paste. Transfer the garlic paste to a food processor and add the roasted red pepper, the remaining 2 Tbs. oil, the remaining 1/2 tsp. each of cumin and chipotle, and 1/2 tsp. salt. Purée into a smooth sauce.

Garnish the chicken with the cilantro and serve with the sauce. Makes 4 servings

There is no such thing as free shipping. Any merchant that is offering "free shipping" has priced the shipping cost into the product. If you were to order 3 items from those merchants, then you would be paying the shipping costs 3 times, when the cost only increased by pennies for the multiple item shipment. We'd be thrilled to be able to ship items to you by pricing them including shipping costs like many of the electronics retailers do. However, for our products where the prices are typically under $15.00, we don't feel that adding $5.00 or $7.00 to each item would be fair to my customers, and in any case would result in doubling the product price.

How can you make the shipping costs more equitable?
If you order a single spice package from us costing $3.00, you'll find that most of the time adding several more packages to your order will only add a few cents to the shipping costs. This is because the first package for shipping cost is typically 3.17 and each additional package would be .34 each in the US. So by ordering more than one package of spice, you'll find the amount of shipping becomes fairer to the price you're paying for our products.  So in essence, the more you order the more you save on shipping cost.
