The British Ale II strain has the classic profile of many British and Canadian ales. It has a good flocculation producing brilliantly clear beers. It is especially noted for its malty flavor characteristics and crisp, clean finish.
Yeast Between 6 Months and 12 Months Old
This yeast has been reduced in price because it is more than 6 months old but less than 12 months old. Wyeast suggests using this yeast within 6 months of production for best results. They also suggest that this yeast will provide good results when used within 12 months of production when stored properly. We have had excellent results with yeast in this date range however we do not guarantee this product beyond 6 months of production. Even though we pride ourselves on fresh product, we offer this item at a reduced price out of customer demand. When using yeast 2 or 3 months after the production date, we highly recommend taking these measure to insure success:
Allow the package to fully swell after activation despite package directions. It may take between 1 and 7 days to fully activate. Yeast will activate slower as it ages.
Make a yeast starter before adding to the beer or wine to further encourage vigorous activity. Once a healthy starter is produced, the resulting yeast culture is as viable as freshly produced yeast.

How to use Wyeast Packages:
How To Achieve Successful Results. Liquid yeast can produce excellent results. However, it can be very sensitive to improper use or conditions. Please follow the tips below to insure successful results:
To activate, locate and move inner packet to a corner. Place this area in palm of one hand and firmly smack package with the other hand to break inner nutrient packet. Confirm inner packet is broken.
Shake the package well to release the nutrients.
Allow package to incubate and swell for three hours or more at 70-75°F (21 - 24°C) or immediately direct pitch into wort.
Use sanitizing solution to sanitize the package before opening.
Shake well, open and pour Activator™ into 5 gallons (18.9L) of well-aerated or oxygenated wort up to 1.060 OG at 65-72°F (18-22°C). Maintain temperature until fermentation is evident by CO2 bubble formation, bubbling airlock or foaming on top of wort.
Adjust to desired fermentation temperature.
Allow the package to slowly warm to room temperature before activating.
After activating the package, wait for it to fully swell before adding it to the wort. It is normal for older yeast to activate more slowly. Wait one day for each month of age for the package to activate (for example, if the yeast is 4 months old, allow 4 days to activate). Plan your brewing day in advance to allow for adequate activation. If it is necessary to add the activated yeast before it has fully swollen, this will result in a long-lag time and delayed fermentation of 4 to 7 days. This is normal and the quality of the beer will not be affected.
There may be a long lag-time before the yeast begins fermentation and will depend on numerous factors including temperature, yeast age, wort composition, etc. If there is no yeast activity within the first few days, do not open the fermenter or agitate the wort as this may stall the fermentation further. Some yeast may exhibit a long lag time of 4 to 7 days in certain conditions.
Do not exceed the maximum alcohol tolerance of the yeast.
Use yeast nutrient.
Aerate the wort for proper oxygenation. Caution: excessive oxygenation with the use of forced oxygen gas may delay fermentation by increasing the respiration cycle of the yeast.
Do not use excessive adjuncts or non-traditional ingredients.
Brewers yeast is guaranteed to function successfully only under traditional conditions and in traditional recipes. Do not expect successful results when using yeast in extreme conditions including high gravity recipes, high levels of sugar or adjuncts, excessive agitation, low nutrient worts and low or excessive aeration. When exposed to such undesirable conditions, yeast may exhibit some certain characteristics such as long lag time, long and sluggish fermentation, low attenuation, stuck fermentation and off-flavors.

Activator™ packages are designed for direct inoculation of 5 gallons of standard* wort. Activator™ packages contain live yeast cells in a liquid slurry. This yeast slurry is packaged in an optimum condition for storage, while maintaining the ability for rapid and complete fermentation.
Activator™ packages include a sterile liquid nutrient pouch that, when “smacked”, releases its contents into the yeast slurry and “activates” the package. The available nutrients initiate the culture’s metabolism which in turn generates CO2 and causes swelling of the package. This process will reduce lag times by preparing the yeast for a healthy fermentation prior to inoculation. Activation also serves as a viability test of the culture. Expansion of the package is an indicator of healthy (viable and vital) yeast. Although beneficial, cultures do not need to be activated prior to inoculation.
The Activator™ package contains a minimum of 100 billion cells in a yeast slurry. The Activator™ is designed to directly inoculate 5 gallons of standard strength ale wort (1.034-1.060 SG) with professional pitching rates. For lagers, we recommend inoculating the wort at warm temperatures (68-70°F/ 20-21°C), waiting for signs of fermentation, and then adjusting to the desired temperature. Alternatively, for pitching into cold conditions (34-58°F/ 1-14°C) or higher gravity wort, we recommend increasing this pitching rate. This can be achieved by pitching additional Activator™ packages or by making a starter culture. Please see the Pitch Rate section for additional information.
Full swelling of Activator™ packages is not required for their use. The contents of Activator™ packages may be direct-pitched without prior activation. Our smack pack technology is intended to be a tool for your use in determining viability, and in initiating metabolism for faster starts to fermentation.
Our Product Warranty states that we guarantee the viability of the yeast in our Activator™ packages for 6 months from the manufacture date assuming that they have been properly shipped, stored and handled. Our superior packaging material provides 100% oxygen barrier and UV light protection making this exceptional guarantee possible. During this 6 month guaranteed shelf life, some loss of viability is to be expected. This will vary from one strain to another. Activator™ packages that are 4 months old or older may require additional time to swell after activation.
Activator™ packages will sometimes swell slightly, or moderately during shipping or later while properly stored. This is not an indication of deterioration if the package is less than 6 months old and has been properly handled. This is result of trace amounts of nutrients, still available at the time packaging, causing small amount of culture activity and CO2 production. Some strains are more prone to this than others.

Q: What should I do if my package has not arrived?
A: First, please make sure that you have allowed the appropriate amount of time shown above for your package to be delivered based on your location and the shipping service you selected. If your package does not arrive by our expected arrival date, please notify us and we will happily assist you. Please allow us 1 week to investigate your shipment. Most delivery problems are easily resolved and the shipment is quickly recovered. However, in the rare occurrence that a shipment is lost, a replacement order will be sent through the same shipping service that was originally purchased after the 1 week investigation period. If an incorrect or incomplete address is provided by the buyer causing the package to be returned, the buyer will be responsible for any costs to re-ship the package.
Q: What happens if my order arrives damaged?
A: We take great pride in packaging your order so that it arrives safely. However, in the rare occurrence that you experience a damaged shipment, we will happily resolve the situation for you. Any damages must be reported within 2 business days of receiving your shipment and photo documentation will be required for replacement or reimbursement. Replacement items will be shipped through the same shipping service that was originally purchased by the buyer.
Q: Can I return my purchase?
A: We are happy to accept any returnable items provided they are unused, unopened and in their original condition. All returns must be authorized in advance and must be mailed back within 1 week of receiving your order. The buyer is responsible for return shipping costs.
