Celery seed is the seed of plant closely related to celery, cultivated specifically for its aromatic, flavorful seeds. It can be found as an ingredient in spice mixes all over the world, and is also available plain in whole and ground form. Like other plants in the Apiaceae family, celery seed has a strong celery like flavor and aroma, with a faint hint of spiciness. Most grocers stock celery seed, and it can also be ordered directly, although consumers who plant to eat it should make sure to order food-grade celery seed.   India, China, and France all cultivate celery seed, which appears to have originated in the Middle East. The small brown crescent shaped seeds are often included in pickling mixes, or added to dressings, soups, breads, and a wide assortment of other foods.Celery seed adds the unique flavor of celery to foods without the bulk or undesired crunch of celery. In many cases, it is used whole so that the seeds explode in the mouth when they are bitten into, creating a burst of flavorful volatile oils. Another plant with a strong celery flavor is celeriac, or celery root, a root vegetable in the same family.

Cloves - can be used in cooking either whole or in a ground form, but as they are extremely strong, they are used sparingly. Dried cloves are used in the production of chai tea, which has a sweet cinnamon taste. It is used in Indian and Mexican cuisine where it is often paired together with cumin and cinnamon. It is also a key ingredient in tea along with green cardamom and is normally added whole to enhance the presentation and flavor of the rice. During Christmas, it is a tradition in some European countries to make a pomander from cloves and oranges to hang around the house. This spreads a nice scent throughout the house and the oranges themselves act as  Christmas decorations.
Coriander - I use this unique herb in my nosalt alternative. It adds a sweet taste to anything you use it in. It goes great with nutmeg and cinnamon in baking and I use it sparingly due to its strong flavor. Coriander is the seed of Coriandrum sativum, a plant in the parsley family. Its origin is from Morocco and Romania. It is used in Indian curries, american cigarettes and sausage. It is also used in desserts and sweet pastries as well as meats and seafood dishes. It has a mild, distinctive taste similar to a blend of lemon and sage. It is not interchangeable with cilantro even though it comes from the same plant.
Cumin - This Native Mediterranean Seasoning Is Used to Enhance The Flavor of Pickled Vegetables, Meat and Poultry Stews and Some Tomato-Based Sauces. It Is Traditional In Caribbean and Mexican Cuisine (Chili With Meat) and Is A Basic Ingredient In Oriental Cuscus, Indian Curry and Bean Dishes.
Fenugreek - has a long history as a breast enlarger and contains diosgenin which is used to make synthetic estrogen. It has been found to promote the growth of new breast cells and increase the size and fullness of the breasts. Of all the herbs used for breast enlargement fenugreek has the highest concentrations of the effective plant compounds. Diosgenin, a steroid sapogenin is the starting compound for over 60% of the total steroid production by the pharmaceutical industry. Other sapogenins found in fenugreek seed include yamogenin, gitogenin, tigogenin, and neotigogens.  While Fenugreek is considered the finest herb for enhancing feminine beauty it also aids in sexual stimulation, balances blood sugar levels, and contains choline which aids the thinking process. Fenugreek has been the focus of several studies concerning the treatment of diabetes and the prevention of breast cancer. Its ability to balance hormone levels aids in treating PMS and menopause. Its antioxidants slow ageing and help prevent disease. The plant has also been employed against bronchitis, fevers, sore throats, wounds swollen glands, skin irritations, diabetes, ulcers, and in the treatment of cancer. Fenugreek has been used to promote lactation and as an aphrodisiac. Fenugreek contains an amino acid called 4-hydroxyisoleucine, which appears to increase the body's production of insulin when blood sugar levels are high. Higher insulin production may decrease the amounts of sugar that stay in the blood for many individuals. In some studies of animals and humans with both diabetes and high cholesterol levels, fenugreek lowered cholesterol levels as well as blood sugar levels.  However, no blood-sugar lowering effect was seen in non-diabetic animals. Similarly individuals with normal cholesterol levels showed no significant reductions in cholesterol while taking fenugreek.  Fenugreek contains an amino acid called 4-hydroxyisoleucine, which appears to increase the body's production of insulin when blood sugar levels are high. Topically, the gelatinous texture of fenugreek seed may have some benefit for soothing skin that is irritated by eczema or other conditions. It has also been applied as a warm poultice to relieve muscle aches and gout pain. 
Granulated Garlic - An herb affectionately called "the stinking rose" in light of its numerous therapeutic benefits. A member of the lily or Allium family, which also includes onions and leeks, garlic is rich in a variety of powerful sulfur-containing compounds. While these compounds are responsible for garlic's characteristically pungent odor, they are also the source of many of its health-promoting effects.  Sulfur itself is a key part of our health. Several research studies have noted that the average U.S. diet may be deficient in sulfur, and that foods rich in sulfur may be especially important for our health. In addition to all of the sulfur-related compounds listed above, garlic is an excellent source of manganese, a very good source of vitamin B6 and vitamin C and a good source of selenium.  Most of the research on garlic and our cardiovascular system has been conducted on garlic powder, garlic oil, or aged garlic extracts rather than garlic in food form. But despite this research limitation, food studies on garlic show this allium vegetable to have important cardioprotective properties. Garlic is clearly able to lower our blood triglycerides and total cholesterol. But cholesterol and triglyceride reduction are by no means garlic's most compelling benefits when it comes to cardioprotection. Those top-level benefits clearly come in the form of blood cell and blood vessel protection from inflammatory and oxidative stress. Damage to blood vessel linings by highly reactive oxygen molecules is a key factor for increasing our risk of cardiovascular problems, including heart attack and atherosclerosis. Oxidative damage also leads to unwanted inflammation, and it is this combination of unwanted inflammation and oxidative stress that puts our blood vessels at risk of unwanted plaque formation and clogging. Garlic unique set of sulfur-containing compounds helps protect us against both possibilities-oxidative stress and unwanted inflammation.
Ginger - This Ginger has a very mild flavor. A crucial part to your spice rack. Use this spice in all asian dishes.  I love this mild spice in ginger cookies. Perhaps no other herb, except garlic, crosses all barriers, Western versus Oriental, scientific versus folk tradition. Ginger is a universal herb in all respects. Components of ginger such as gingerol. 
Mustard Seed Yellow - This herb is used  in cooking, as a condiment or as a soothing poultice for reducing pain and swelling.  It is also used to help with fertility and protection in magik. This is very clean herb. Mustard is well known as a culinary condiment. However, it also contains compounds that make it useful for herbal medicine.  While mustard may be eaten, the strong spice can be used externally to treat musculoskeletal pain. It can also be used to treat bronchitis, fever, cold and flu. Mustard is primarily used externally to treat discomfort of joints. It can be used to help reduce fevers and treat the symptoms of cold and flu. When applied externally, mustard can help relieve musculoskeletal pain and cause improved circulation. It may also be used to induce bowel movements.

Since it is freshly ground it has a more pungent flavor and you use less in your cooking! A crucial part to your spice rack. Granulated Onion - is a spice used for seasoning in cooking. It is made from finely ground dehydrated onions, mainly the pungent varieties of bulb onions, which causes it to have a very strong odor.  There is evidence that onion's sulfur compounds may work in an anti-clotting capacity and help prevent the unwanted clumping together of blood platelet cells. There is also evidence showing that sulfur compounds in onion can lower blood levels of cholesterol and triglycerides, and also improve cell membrane function in red blood cells.

Peppercorns - are the fruit of Piper nigrum, an evergreen climbing vine. Black, white, and green peppercorns all come form the same plant, but they are harvested at different times and handled in different ways. To make black pepper, the clusters are plucked when they are not quite ripe. They are then left in piles to ferment. After a few days, the berries are spread out on a mat and left to dry in the sun for two or three more days until they are shriveled and nearly black. 
White pepperorns - the berry is picked fully ripe. Its outer shrunken skin is rubbed off, exposing the dried, grayish-white pepper inside. White pepper has a milder, more delicate flavor than black pepper, and is useful for adding a peppery flavor to light-colored sauces and soup without adding black color. White pepper is popular in European cuisines.

Xanthan gum -  is a polysaccharide used as a food additive and rheology modifier. It is produced by fermentation of glucose or sucrose by the Xanthomonas.  Xanthan is used by people who are allergic to gluten to add volume and viscosity to bread and other gluten-free baked goods. It is made from a tiny microorganism called Xanthomonas campestris and is a natural carbohydrate. It is typically found in commercial salad dressings, ice creams and other suspensions or liquid products that require an emulsifier and is a great way to thicken rice mild based sauces, soups and non dairy ice cream. Produced from cellulose from corn or cabbage it functions similarly to gelatin but is vegan. It is expensive, about $10-12 for 8oz , a small amount goes a long way.
