This book breaks down the rational behind recipes, giving you a basis upon which to start learning to cook from scratch. I will be using this book as a guide to a session at our Girl Scout Day Camp this summer, about cooking. I have now purchased 5 copies, one for myself, one for camp, and 3 for Christmas presents! I will be purchasing more for presents but need to put more money on my Paypal account! This book should be one of your top 5 cookbooks on your go to shelf.

this is a totally new kind of cookbook- the basic premise is that if you can make one item you can transform it into others- so cream and sugar become pastry cream add eggs and more cream and you have vanilla ice cream etc etc etc - so the basic idea is to master the first simple recipe and then changing the ratio of ingredients make something else- REALLY COOL
