Chef Prodhomme wrote this book when he had to make a drastic change in his cooking and eating habits or die. I am at the same place in my life and I would like to eat healty but I want something that is good, and interesting to eat. I don't want broiled chicken, that taste like cardboard. Chef Prodhomme set out to learn a new way to cook, and serve more healthful foods. I believe he accomplished what he set out to do. By combining traditional foods with interesting new and exciting ways to season, cook, and serve foods he has reinvented another way to cook by using unorthodox ingredients. Thickening sauces, and gravies with low fat puree of beans, grains, and seasoning with low fat broth. He has managed to keep the taste and texture of normally High fat dishes.
