There are so many options to choose from right here on Ebay! First you need to figure out what is to be learned. Then you can alter the craft or kit to suit your needs.
I have found quite a few great kits from Scholastic that seem to fascinate my son! He is a very hands-on kid and these really get him into it. They have kits for candle making (motor skills), Icky science kits (need I say more?) and so much more. My son is 9 and I would say these kits are great for kids anywhere between 5 and 11 depending on what you are teaching.

Did you also know that jewelry making is great for developing fine motor skills! Now's a perfect time to start because they can give their handywork out for gifts throughout the year!
Field trips to local places are also a great bet. Everyone has history and science right in their backyard, so to speak.
If you have a child who is interested in science, how about a scavenger hunt? Look though science books and let them lose in the backyard with their list!
Crafts are always a great idea for developing both fine motor skills and creativity! And with the variety available, it's easy to find one the correlates to their special interest. How about a scrapbook? Even if it contains all kinds of Pokemon info, they are getting practice in the skills they need and creating a work they can be proud of!
