This recipe is so good. I have to share it . This recipe is enough food for a family of 6-8. To make less (3-4 people), use half of whats needed. Average cooking time is 20-30 minutes
This is what you will need:
2 pounds of hamburger or chicken.
1 packet of taco seasoning
2 cans of red or green enchilada sauce
2 cans of cream of mushroom soup
16 ounces of sour cream
1 bag of shredded cheddar cheese
1 onion
2-3 cups lettuce
1 tomato
1 can of olives
1 can of refried beans
Hot sauce or salsa
8-12 white flour tortillas

1st mix the sour cream, enchilada sauce and cream of mushroom soup in a pot. Let it cook on low to medium heat occasionaly stirring. Next cook the hamburger or chicken (I like to add onion) then add the taco seasoning. I also like to add a can of refried beans to the hamburger and cook it until the beans are creamy. While the meat is cooking, get the cheese, lettuce, olives, diced tomato and onions prepared. Next when the meat is ready get a skillet (big enough to cook a tortilla) and melt 1 tablespoon of butter over medium heat. While the butter is melting, if you didn't add the refried beans to your meat then spread it thinly on the whole tortilla, next put cheese on top of the refried beans, add 2 scoops of meat in the middle of the tortilla. Put the tortilla in the skillet with all these ingredients, not folded so all sides can cook. When the tortillas outside is golden brown, fold both sides in like a burrito (I have to use a fork to do this) and place the enchilada face down on the plate so it stays folded Next put 1/2-1 cup of the sauce over the top. Top with more cheese, onions, olives, tomatos, lettuce and salsa. Enjoy!
