3, 2, 1.... Happy New Years!!!

You've had a great night celebrating with family and friends. Everyone sleeps in the next day, so instead of breakfast, let's plan Brunch. I love brunch! Whether it's for an intimate couple or a group. With a little planning ahead, you can pull this off.

Here is a great recipe for your crock pot!! It can stay warm, no matter what time your guest get up and it's all in one pan! That's a big hit for me. Right after midnight, everyone is saying their good nights, getting in their final kisses and heading off to bed. Not me, I'm getting out my crock pot ready for breakfast tomorrow. This recipe will cook all night on low and by tomorrow morning's brunch it will be ready to roll.

Sausage, Egg, & Cheese Breakfast Casserole

  • 1lb. ground sausage, any type you like
  • 6 Large eggs
  • 2 Cups of Milk
  • Salt/pepper to taste
  • 1 1/2 Cups shredded cheese - I use cheddar
  • Bag of shredded hash browns. Cook the sausage - you can do this before hand and toss it in the fridge, it will be heated perfectly the next day.

Whisk your eggs with the salt/pepper.  Add the milk.

Spray your crock pot with non-stick spray.

On the bottom of the crock pot toss down the packet of shredded potatoes.

Add the sausage.

Top with cheese.

Pour in the egg mixture over top of everything.  

Put the lid on and forget about it.  Head off to bed!

Let this cook on low for 8 hours.

Now of course, not everyone is going to love this, so you have to plan.  This next recipe is also something you can make ahead and put in the fridge.  I'm all about being able to enjoy my time with friends and family, but also get a good night's sleep.  

Make sure to have some pure Vermont Maple Syrup for this recipe. You can warm it in a saucepan filled with water, keep it on low and let it slowly warm the syrup.  Never microwave syrup.

French Toast Bake

  • Loaf of Sour Dough bread
  • 8 Eggs
  • 1/2 Cup Brown Sugar
  • 1 Tsp Cinnamon
  • 1/2 Cup Flour
  • 1/4 tsp salt
  • 3/4 Cup Sugar
  • 2 tbsp Vanilla
  • 1/2 Butter
  • 1/2 heavy cream
  • 2 Cup Milk

You'll need a 9X13 inch pan for this.  Grease it up, so nothing sticks.

Cut the sour dough into cubs and place them into your grease pan.

In a bowl mix together your eggs, milk, heavy cream, sugar, and vanilla.

Pour over the bread.  Now cover the pan with plastic wrap and let sit in your fridge over night.  

Mix the flour, brown sugar, cinnamon, and salt together in a bowl.

Cut in the butter with this mix, until you get crumbs.  

Cover the bowl and put these in the fridge too.

In the morning, you'll need to preheat the over to 350.

Get your pan out of the fridge and your crumbs.

Sprinkle the crumbs all over the top of the bread cubes.

Bake for 45 mins to 1 hour.  Dust with powdered sugar and serve with warm maple syrup, it's amazing!!

Now you can't have all this great food, without having something savory to drink right?  Yes, you could serve mimosa's, but I'm pretty sure everyone is over champagne.

So let's try an iced coffee with some sweetness!

Iced Coffee

Brew your coffee 12 cups.

You'll need a can of Sweetened Milk.

Make sure you use a GLASS jug for this.  It's easier to reheat if needed.

Pour the sweetened milk into your glass jug.

This could take awhile.  

Pour the coffee over top.

Put the lid on and shake it up.

This iced coffee can sit in the fridge to chill over night.

The ratio is, 1 can of Sweetened Milk to 12 Cups of coffee, yes, I like coffee with my sugar.  You can add as much or as little of the milk as you want.

Of course, there is always a health conscience person in the group.  And good for them!  Set out some fruit salad.  Or my personal favorite, a waffle/fruit salad kabob!

Buy some waffle sticks, thaw those bad boys, set the on a tray near a toaster and let your guests make some waffle/fruit kabobs.

For fruit, use sturdy fruit; bananas, apples, strawberries, and grapes. 

The kids might even like these!

Filled Croissants

And just in case you have someone who isn't hungry, and would like something light, try these croissants! 

Buy some refrigerated croissants. Fill them with Jelly or some sort of nut spread. Bake per the package.

Quick and simple!

Hopefully you will be able to sleep in with your guests, instead of having to slave over the stove.  Don't forget your new years resolution!!
