Nothing says summer time to me more than getting together with family and friends, watching the kids play and enjoying chowing down on watermelon! There's something about those tasty green and red melons that scream, "It's summer!" to me. I could eat watermelon all day, every day, but my kids need a little more variety in their meals. Together we came up with seven fun and unique ways to eat watermelon. Check them out below.

Watermelon Cupcakes

Cupcakes aren't just for birthdays anymore! These watermelon cupcakes are the talk of the playground and they are so easy to make I don't mind whipping up a batch a few times a week.
All you need is:
  • Watermelon
  • Whipped Cream Frosting (you can use Cool Whip or make your own. I make mine by mixing 1 cup heavy cream, 1 Tbsp powdered sugar and 1/2 tsp vanilla in a blender for 40 seconds)
  • Sprinkles
  • Cupcake Liners
  • Metal Cookie Cutters
Directions:
  • Cut thick slices of watermelon.
  • Use the cookie cutter to cut shapes out of watermelon.
  • Place shape in cupcake liners (use at least two cupcake liners to make sure water doesn't soak through).
  • Frost "cupcakes" with whipped cream frosting.
  • Add Sprinkles.

Watermelon Shapes

For my kids, everything is more fun to eat when it's in fun shapes! I use cookie cutters to cut sandwiches and food decorators to cut fruit and veggies all the time. To make heart-shaped watermelon or butterflies or flowers or whatever your heart (or kids) desire, use your food decorators and place on a plate or on a stick.

Watermelon Mint Feta Salad

This is a great way to add a little more flavor to watermelon and is the perfect side dish to take to any party or BBQ.
Ingredients:
  • Watermelon (about 5 cups cut into cubes)
  • 1/2 cup Feta cheese crumbles
  • 4-5 Mint Leaves finely chopped
Directions:
  • Combine all ingredients in a large bowl, and toss to combine.
  • Serve in bowl or cut watermelon in half, clean out watermelon from inside, and use rind as bowl.

Watermelon On A Stick

This is a fun way to eat watermelon if you are going out later in the day or want to keep the kids (and yourself) clean. All you have to do is slice watermelon like normal, cut into triangles and insert Popsicle sticks into the rind. It's like eating a Popsicle only healthier!

Watermelon Candy Popsicles

Speaking of Popsicle, how about some watermelon candy flavored Popsicles?! Supplies:
  • 1 packet Watermelon Kool-Aid
  • 1 cup club soda
  • 1/4 cup sugar
  • Popsicle Mold
Directions:
  • Combine all ingredients in blender, and blend until smooth (about 20 seconds).
  • Pour into Popsicle mold, and let freeze.
  • Run mold under warm water when taking Popsicles out to keep Popsicle stick intact.

There is no better way to cool down on a hot summer day than with a cool slush. Getting them from a fast food joint or gas station can be expensive with lots of kids, and they are packed full of sugar. Try this watermelon version for a natural alternative.
Ingredients:
  • 5 cups watermelon, cubed and frozen
  • 1 cup cold water
  • 1/2 cup sugar
  • 2 Tbsp lemon juice
Directions:
  • Place ingredients in a blender, and blend until smooth, about 20 seconds.
  • Serve in cups with smoothie straws.

Watermelon Sorbet

Sorbets are a lighter alternative to ice cream and are super easy to make. You make this watermelon sorbet just like the slush above but just cut the water in half.
Ingredients:
  • 5 cups watermelon, cubed and frozen
  • 1/2 cup cold water
  • 1/2 cup sugar
  • 2 Tbsp lemon juice
Directions:
  • Combine all ingredients into blender, and blend on ice cream setting (I love using a Blendtec for this).
  • Scoop into bowls and enjoy!
