I gave this book to a friend who loves to preserve jams amd jellies for she and her husband....and a few close friends! The key to this book is that you don't have to spend all day in the kitchen and there is no big assembly line set up. The portions are kept low, like for the Sherried Strawberry Preserves that use just 5 cups of strawberries or you can turn that into Strawberry Daiquiri Spread or Strawberry Wine Sauce! This is the second edition of this small batch preserving book, but it has the lastest and safest processing methods, a new chapter on freezer jams and even microwave recipes like Ginger Plum Jam. I'm waiting for my first jar now!
I select my cookbooks very carefully and don't offer a review lightly. I have been cooking since I was 8 yrs old. Knowing my way around the kitchen, I whole heartedly endorse this book. It's GREAT! Amongest its 300 hundred outstanding recipes, it offers a nice selection of the old-fashioned recipes as well as new and different treats. Anyone who cans will thoroughly enjoy this book. Its im-pressive. All recipes are very easy to follow. The only thing I wish this book would add is more photos of each recipe. There are some, but not of all recipes. If you have the opportunity to purchase a copy, consider it a gift to yourself. There are many categories. Experienced and eager cooks always enjoy a great new book, this is one of them. The concept of making recipes using 2+ cups of fruit is manageable and allows the reader to make an economical recipe. The pictures are beautiful and the author includes a list of recipes before each chapter. The "tips" throughout the book are helpful and clarify why a recipe's directions need to be followed.
